    Karst landscape

    Are you ready to ride in nature? The entire network is accessible by mountain bike. Many parts of the network are also accessible to normal road touring bicycles. The characteristic qualities of karst landscape manifest themselves at the surface as well as below ground. Often the surface of the fields and unmade roadways have the appearance of a reticulated network of ‘V ’-shaped grooves, where the rock is fractured and weathered. Small ponds are created through surface erosion and the subsequent presence of algae, which produce carbon dioxide and organic acids. The development of holes in the surface of vertical rocks is due to the acids released by small clumps of moss and algae which cling to the rock surface. Other organisms that flourish within the first few millimetres of the rock’s structure may also have a similar corrosive effect.

    Returning to the city of Andria will be a memorable occasion to taste the local foods. The cheese tradition takes the name of this city to be famous even beyond the national borders, thanks to the burrata: a mozzarella stuffed with stracciatella, a real pleasure for the taste buds. You can enjoy it accompanied by bread and extra virgin olive oil variety coratino, or cherry tomatoes and arugula. Another speciality of Andria is the tenerello, a confectioner born about 120 years ago, which you can taste in the museum in the historic center, home of the confectionery factory.

    Go to Capomulino and you can't miss the panzerotto, specialty of the house. Now new are the panzerottini, ideal as an appetizer or to snack on during dinner. In the kitchen of this risto-.pizza, there is the tradition of a product such as panzerotto combined with novelty. Alternative doughs such as cereal dough, wheat dough or the Mediterranean dough more commonly known as pizzaiola dough. A multitude of fillings will make your mouth water just thinking about it, so much so that you'll want to come back to try some more, or customize your panzerotto. Among my favorite fillings: mortadella, pesto and pistachio or even mortadella, cream of walnuts and turkey rump and even cream of mushrooms and sausage from Norcia, I could list them endlessly.

    Do not miss the Cathedral! The present cathedral was built by the Norman Geoffrey of Hauteville, lord of Andria, on top of an earlier and smaller church of the 7th-8th century, which forms the present crypt. It was rebuilt in the mid-14th century in the Late Gothic style, and again later in the Baroque style. The cathedral was damaged by a fire in 1916 and again restored in 1965. The frequent rebuildings have given what is basically a Norman church a predominantly Late Gothic appearance.

    The food is local and tastes incredible. Local meat, the Parmigiana with mozzarella stracciatella and pistachio pesto is something incredible!!! You have to try it! They also do gluten free and dairy free if you wish. Excellent selection of wines! The service is very respectful and friendly.
